Moist Vanilla Cupcake Recipe

Step 1: Gather Ingredients

  • 1 2/3 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 tsp kosher salt
  • 3/4 cup unsalted butter (melted)
  • 3 egg whites (room temperature)
  • 1 tbsp vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup whole milk

Step 2: Preheat Oven

Set your oven to 350 degrees Fahrenheit. You can also prepare the cupcake pan by dropping in some cupcake paper liners.

Step 3: Sift Together Dry Ingredients

In a large bowl, sift the flour, sugar, baking soda, baking powder, and salt. Then whisk it all together until combined.

Step 4: Separate the Eggs

Separate the yolks from the whites. While you're only using the whites in this recipe, you may want to hold onto the yolks for a future custard or something.

Step 5: Combine Wet Ingredients

In a separate bowl, add the wet ingredients and whisk until they're all combined (it's ok if the batter is a little on the clumpy side!).

Step 6: Mix Wet and Dry Ingredients

Pour the wet ingredients into the dry ones and stir until combined.

Step 7: Pour Batter Into Liners

Now, carefully and evenly pour the batter into the cupcake liners. You want each liner to be about 2/3 full with batter.

Step 8: Bake

Slide the cupcake pan into the oven and bake for about 18 minutes. The centres should be almost springy to the touch when they're done.

Buttercream Recipe

What's a cupcake without some buttercream?

Step 1: Gather Ingredients

  • 2lbs confectioners sugar
  • 1 tsp whole milk
  • 1 tsp vanilla extract
  • 1lb unsalted butter (room temperature)
  • 1 tbsp heavy (or whipping) cream
  • 1 pinch kosher salt

Step 2: Ready the Mixer

If you have a stand mixer, fit it with the paddle attachment for best results. If you don't have a stand mixer, a hand mixer and large bowl should also work.

Step 3: Cream the Butter and Sugar

Once your mixer is ready to go, begin by creaming the butter. Then, split the confectioners sugar in half and add in one batch at a time.

Step 4: Add the Rest of the Ingredients

Now, add in the salt, cream, milk, and vanilla. Mix everything together until it has a fluffy consistency.

Step 5: Top the Cupcakes!

Once the cupcakes are done and completely cool, top each one with a large dollop of buttercream. You can just spread it on, but for a neater touch consider transferring the buttercream to a piping bag to top your cupcakes. Feel free to add some sprinkles or other decorations as well!
